Even assuming that your wife would be willing to sign such a document
-- any change the original custody agreement would have to be approved
by the court. It is extremely unlikely that the court would
consider such an agreement to be reasonable -- which means that the
court would nullify the document -- and would not change the custody
agreement based on it.
Your best bet is to negotiate the best shared custody/visitation agreement you can -- now -- at the time of the divorce.
If, and when, she marries this other fellow (or anyone else who you
have valid reason to believe might harm your children) you should ask
the court to re-visit the custody issue.
